I am a huge fan of Jessica Seinfeld’s cookbooks Deceptively Delicious and Double Delicious (and her website Do it Delicious) in which she uses vegetable purees to secretly fortify meals a picky eater will enjoy. I have found great success specifically with her Turkey Chili, Sloppy Joes, and Tacos but I’ve also added the concept to other staples that my picky eater will enjoy like my Mexican Rice or my Baked Spaghetti with Meat Sauce (click here for more of my own creations).
The thing I love most about Jessica’s cookbooks is that you don’t have to be a picky eater to enjoy her recipes. Mike and I LOVE her creations – and because they have been inspected by her own nutritionist, I can rest assured they are in fact healthy and nutritious for us. If you remember my Day 16 post for the 40 days for change challenge, many of the meals we’ve been eating come right out of the pages of Jessica’s cookbooks.
