Those of you who have followed my blog for a while know that Elijah is not one to eat very well or very much. Our pediatrician suggested making our own smoothies, but on the whole they have not gone over very well.
Remembering a smoothie I tried from a demonstration at Costco, I was inspired today and tried to recreate something similar Elijah might actually drink. He has major texture issues, so the smoothie has to be completely “chunk-less” in order for little man to take more than one sip.
Not only did he like it – he drank the whole cup. And just so you don’t think I’m crazy – Mike and I had some and were actually really big fans as well. I’ll include the recipie for any other moms who are struggling with some picky eaters!
Banana Spinach Smoothie
1/2 cup spinach puree
3 dole pear fruit cups (in light syrup)
6 ice cubes
Honey to taste
1. Make spinach puree by steaming baby spinach for 45-75 seconds and then blending in a blender for smooth consistency. (you may need to add a little water to aid in the blending – 2-4 tbsps depending on the volume of spinach you begin with)
2. Once the spinach puree is made, portion out 1/2 a cup for the smoothie.
3. Chop two bananas and add to spinach puree in blender.
4. Add three pear fruit cups, ice and honey to your liking
5. Blend and enjoy!
